Pershuberry Crisp — Recipe Card
Ingredients
Fruit Filling
1 cup persimmon pulp
2 cups chopped rhubarb
2 cups sliced strawberries
¼–½ cup sugar
2 tbsp cornstarch
1–2 tbsp strawberry glaze (optional)
1 tsp vanilla
Pinch of salt
Crisp Topping
1 cup oats
½ cup flour
½ cup brown sugar
½ tsp cinnamon
¼ tsp salt
½ cup butter, melted or softened
Instructions
Preheat oven to 350°F.
Mix all fruit filling ingredients and pour into a greased baking dish.
Combine topping ingredients and sprinkle over fruit.
Bake 35–45 minutes until bubbly and golden.
Cool 10–15 minutes before serving.
Notes
Persimmon naturally sweetens the rhubarb — adjust sugar to taste.
Strawberry glaze brightens color and thickens the juices.
Freezes beautifully before baking.
