Pershuberry Crisp — A Mother Wolfe Original

There are desserts you plan, and then there are desserts that just happen because the fruit bowl, the freezer, and the garden all start whispering at the same time. The Pershuberry Crisp is one of those happy accidents — a sweet‑tart tangle of persimmon, strawberry, and rhubarb that somehow tastes like late spring and early autumn decided to hold hands.

It’s bright, cozy, and just chaotic enough to earn its place in Mother Wolfe’s Originals. Around here, it disappeared fast — except for one child who politely opted for the ice cream topping and called it a night. Honestly, that feels on brand.

Pershuberry Crisp — Recipe Card

Ingredients

Fruit Filling

  • 1 cup persimmon pulp

  • 2 cups chopped rhubarb

  • 2 cups sliced strawberries

  • ¼–½ cup sugar

  • 2 tbsp cornstarch

  • 1–2 tbsp strawberry glaze (optional)

  • 1 tsp vanilla

  • Pinch of salt

Crisp Topping

  • 1 cup oats

  • ½ cup flour

  • ½ cup brown sugar

  • ½ tsp cinnamon

  • ¼ tsp salt

  • ½ cup butter, melted or softened

Instructions

  1. Preheat oven to 350°F.

  2. Mix all fruit filling ingredients and pour into a greased baking dish.

  3. Combine topping ingredients and sprinkle over fruit.

  4. Bake 35–45 minutes until bubbly and golden.

  5. Cool 10–15 minutes before serving.

Notes

  • Persimmon naturally sweetens the rhubarb — adjust sugar to taste.

  • Strawberry glaze brightens color and thickens the juices.

  • Freezes beautifully before baking.
